Lee Holiday Sugar Cookies

This sugar cookie recipe has been used by my husband's family since he was a kid. They make multiple batches every Christmas and eat them for days on end. While these are considered a Christmas cookie in his family, my kids love to make and decorate them for any holiday I'm willing to make them. Best of all there are no specialty ingredients!
Holiday Sugar Cookie Recipe
3 Cups All Purpose Flour
1/2 Teaspoon salt (optional)
1 Cup Butter (softened)
1 Cup White Granulated Sugar
2 Eggs
1 Teaspoon Vanilla (extract is fine)

In a medium (4 quart) mixing bowl cream your butter until soft
gradually add in sugar, continue beating until light and fluffy
beat in eggs and vanilla
sprinkle in salt if using and add flour
blend well with spatula until dough comes together
After your dough is fully mixed you need to divide it in two roughly equal chunks
and wrap it in wax paper. It goes in the fridge until firm (about 3 hours) or overnight.
Take the dough out 20 minutes before you want to roll it out to soften it up a bit.
Roll out on a floured pastry cloth or board and cut with floured cookie cutters

Place on ungreased cookie sheet
Bake at 350 degrees for 10-11 minutes or until light brown
